Food and Beverage Manager


  • Conducts daily departmental briefings and weekly meetings and ensure optimum communications of daily operations, management’s decisions, refresher training and policy information
  • Recommends, develops and monitors annual departmental plans and budgets
  • Ensures that the food and liquor costs are maintained at their agreed levels and that the correct profit margins are achieved
  • Appoints, trains, leads and motivates departmental personnel. Ensures optimum training on up-selling techniques is directed
  • Approves departmental expenses, requisitions and work orders exercising cost control
  • Represents the department in management coordination briefings and meetings
  • Develops and updates departmental policies, systems, procedures and standards from time to time
  • Plans and prepares staff shift schedules, shift rotations and duties. Organizes manpower for extra hands during exigencies
  • Responsible for departmental assets, functionality of tools and equipment. Coordinates with respective departments for preventive maintenance and repairs; recommends improvisation and specifications of requirements for procurement
  • Ensures the maintenance and aesthetic upkeep of the Food & Beverage Outlets, Function Rooms, Board & Meeting Rooms, and Convention Center. Ensures the area is hazard free.
  • Reviews Daily Revenue Report and prepare Food & Beverage departmental Report for reporting to the General Manager
  • Personalized in guest communication and service provision to develop rapport with the guests and develops database for continuous guest patronage. Ensures meeting the VIPs personally attending to their services
  • Monitors the POS systems are operational at all given times
  • Implements cost saving measures through stationery recycling, proper staff scheduling, and minimizing electricity usage and room management in coordination with Housekeeping
  • Prepares monthly Food & Beverage Reports
  • Prepares Management reports as directed
  • Monitors proper billing, reviews remittance reports, and maintains remittance record in coordination with the Restaurant or outlet cashiers. Ensures any discrepancy in remittance is investigated and resolved accordingly

Requirement:

  • At least 5 years experience as F&B Manager in a prestigious hotels/resorts
  • Strong understanding in operational controls, budgeting, forecasting, menu planning & promotion, training and development of F&B staff
  • Excellent communication, interpersonal and managerial skills
  • Computer Skills (word processing, spread sheet, presentation software)
  • Systematic and organized
  • Hands-on management style
  • Strong sense of urgency
  • Place of Assignment: Cebu
